Herbón peppers are the fruit from local ecotype seeds of the pepper variety known as "Padrón". After each harvest, farmers choose peppers from the best plants paying attention to the best characteristics of the product. The fruits must be picked in a early stage when they are 3.5 to 5.5 cm. long. The longer they are, the higher the percentage of spicy substances is, reaching a 100% when they reach ripeness (red colour).


Peppers are cultivated in a traditional way, even if some improving techniques have been implemented, such as the use of greenhouses and of biological elements to fight plagues avoiding insecticides, obtaining therefore a better quality and health guarantee of the product. Together with this, the weather and soil conditions have given as a result a unique, worldwide known product.
