Herbón peppers protected by the PDO are brought to market through different channels: first, by a so-called SAT (Spanish short form for Agricultural Society of Transformation), named Pementeira, and made up by 23 farmers (the higher production); by two intermediate companies which purchase peppers from other farmers, and also by five farmers who bring their own production individually to market. According to the regulation, this must be done from May to the end of October as this is the season peppers are of good quality.


More than 90% of the production complying with the regulation is sold in markets and supermarkets. A guarantee of purchasing authentic Herbón peppers is their package. Herbón peppers are packed in packages previously authorized by the Regulating Council, having the logotype of the guarantee of origin, and further a numbered label.
